Dairy goes vegan! The recipes in this book are all temptingly good. They are clear and simple and you are led through each process step-by-step. In the introduction to the book, which is beautifully illustrated with colour photographs throughout, you have all the information you need about the essential ingredients (and not just soya), kitchen utensils and the various fermentation starters that are available, how to make them yourself, which other ingredients are helpful and above all where you get them. You will find all sources listed. There are basic recipes, such as cashew cheese, on which other recipes then build and a whole range of vegan ‘milk classics’ to make. Vegan cheese, yogurt, tofu, milk, cream and butter are surprisingly diverse and easy to prepare. The wealth of recipes spans the spectrum from tomato rosemary cheese made from almonds, fermented by Rejuvelac and herbal cream cheese from coconut cream, almond crème fraîche to chickpea tofu. There is even a recipe for cheese dip for nachos, and mac and cheese. In addition to the cheeses you will find plenty of spreads, butters with different flavours and full-bodied delicacies such as ricotta or mascarpone. And there are faster variants such as the ‘pizza cheese’. Finally there is a chapter covering vegan drinks such as almond milk, oat drink, quick nut milk with nutmeg and soy milk. So who needs to buy drinks in the supermarket when you can make them much healthier and cheaper yourself? You’ll be surprised how little effort vegan products take to make at home. Once again proof that the vegan diet is quite versatile.

The first full reappraisal of one of Britain’s great fighter aces, this book examines the truth behind Tuck’s 1956 biography, Fly for Your Life. It looks at the evidence behind the myths, checks out some of the exaggerated stories and reveals the real Stanford Tuck. In January 1942 Bob Tuck was the top-scoring British fighter ace with an official score of 29 enemy aircraft destroyed. With film-star looks he was the glamorous role model for the RAF publicity machine and an eager press and public wanting wartime heroes. He had joined the RAF in 1935 and quickly showed his excellent flying skills. In 1940 his Spitfire squadron was fighting over Dunkirk where he proved himself an expert shot. During the Battle of Britain his legendary prowess grew and he was posted to command a leaderless and demoralised squadron, this time flying Hurricanes. He continued to prove he was an outstanding fighter ace, gaining the rare distinction of three DFCs and then the DSO for his leadership. He was shot down over France in January 1942 and imprisoned in Stalag Luft III. His room-mate was Roger Bushell, the mastermind of the Great Escape and Tuck worked with him on the committee and was to be his partner in the escape. In January 1944 however, around 20 POWs, including Tuck, were purged to a new camp. Still determined to escape, when his camp was moved out on the Long March westwards, Tuck and a Polish officer took a risky chance and made their way east to Russian forces and thence to England. This book reveals a more complex man than the one-dimensional hero of the previous biography. Post war, he became good friends with the Luftwaffe ace, Adolf Galland, and was a key advisor with him on the film, Battle of Britain, and, often with his other friend, Douglas Bader, made many media appearances. His health suffered in later years from the impact of his war service and his imprisonment and he died aged 70 in 1987.

Initially used for search and rescue (SAR) duties from aircraft carriers, the rapid development of both the helicopters and service experience resulted in them taking on the vital anti-submarine (and later anti-ship) attack roles. The 1956 Suez campaign saw the first operational use of Whirlwind helicopters for the insertion of troops by air into a battle zone, a capability which was expanded with more helicopters such as the Wessex, Sea King and today's Merlin. Through their vital role in the 1960s Indonesian Confrontation, the Commando helicopter force became universally referred to as the 'Junglies', by which name they are still known today. It is often said that if either of the 1982 Task Force aircraft carriers had been lost the Falklands War could not have been won. The same would surely have been true without helicopters. Their vital tasks, including inserting Special Forces behind enemy lines, protecting the Task Force from Exocet missile attack and recovering wounded troops whilst under enemy fire, are rightly hailed as being instrumental. The Folland Gnat was used by the RAF mainly in the advanced training role, in the 1960s and 70s, where it proved to be an ideal lead-in trainer for high performance aircraft such as the iconic Lightning, the first RAF supersonic fighter.
